Prepare to make the most divine ice creams you’ve ever tasted with the help of Kitty Travers, founder of London’s La Grotta Ices. Kitty is renowned for her creative use of flavour, mastery of technique and commitment to natural ingredients, making her the go-to modern ice cream expert in the UK.
During this practical one-day course you will first try your hand at making eight different types of vanilla ice cream. By using a range of techniques you’ll discover how each one can influence the texture and flavour of your ice cream:
Cornstarch ice cream | Milk ice cream | Vanilla ice cream | Rich vanilla ice cream | Vanilla parfait | Vanilla gelato | Eggless vanilla ice cream | Instant ice cream
Kitty will share the expertise she gained travelling, studying and working in Europe and New York as you learn how to incorporate seasonal flavours into ice creams, granitas and sorbets using made-by-hand techniques and an ice cream machine. During the day, you’ll also create ices using the best of seasonal produce.
The recipes for the next course may include:
Rosemary caramel ice cream | Blood orange granita | Pineapple and lemongrass sorbet.
At the end of the course you’ll have the opportunity to enjoy a grand tasting of all the frozen delights you’ve produced.
Refreshments will be available throughout the day, as well as a buffet style lunch prepared by our team of chefs. All ingredients, equipment and recipes will be provided.
