Join acclaimed food writer and chef Valentina Harris and discover how to make a range of authentic, regional Italian dishes in your very own kitchen.

During this practical, one-day course Valentina will share her love of classic Italian food, equipping you with the confidence and the skills to create a selection of silky risottos and delicious gnocchi guaranteed to impress your friends and family.

Using the best seasonal produce, you’ll learn about the flavours and artisan techniques needed to recreate an authentic taste of Italy in your own kitchen.

No previous experience is necessary; just enthusiasm and a willingness to work alongside other food lovers to make a real Italian feast. A selection of seasonal dishes will be made which may include:

  • Roasted red pepper risotto
  • Risotto with chicken livers and peas
  • Risotto with speck and fontina
  • Mushroom and tomato risotto
  • Risotto with pancetta and leeks
  • White fish risotto
  • Arancini - Sicilian rice fritters Caprese style
  • Spinach and ricotta gnocchi
  • Gnocchi with pesto in the classic Genovese style

 

Refreshments will be available throughout the day. All ingredients, equipment and recipes are provided by the School.
