The award winning Welbeck Farm Shop is celebrating British Food Fortnight with a plentiful selection of game sourced locally from the historic north Nottinghamshire ducal estate. With experienced butchers on hand to provide advice on storage, preparation and recipes, the Welbeck Farm Shop - FARMA's Farm Butcher of the Year - is confident it can offer the best introduction to game as well as a delicious selection from oven ready game birds to venison sausages. The Welbeck game on offer includes venison, rabbit, hare, wood pigeon, partridge, pheasant and mallard which can all be prepared by the in-store butchers to meet individual needs. With local sourcing and provenance becoming ever more important, the Welbeck Farm Shop is abundant with local produce, including a variety of game meats and birds, foods rich in the estate's history, as well as in flavour. As well as being wild, natural and free range, game is also healthy being high in protein and low in cholesterol. General manager Oliver Stubbins said: "For anyone who is nervous of trying game for the first time or looking for guidance on the right cut to use for a specific dish, we can offer lots of friendly advice. We will also prepare the game exactly as required, so for instance, we can remove breasts ready for pan-frying if the customer wasn't confident of tackling this themselves." The game is also available in many cuts in recognition that it can be used in many different recipes from pies, casseroles, soups, sausages and pates as well as the traditional special occasion meal. Choose from diced venison perfect for an autumnal or winter stew or try venison steaks with redcurrant or juniper berries. To complete any recipe, the farm shop also has a fantastic selection of seasonal vegetables and fruits, with many sourced within a 25 mile radius. Welbeck is also home to the pioneering School of Artisan Food, winner of The British Cookery School Award in 2014, which is offering a Game in a Day course where participants can learn practical butchery skills from the importance of hanging to the preparation of a saddle of hare.
