Local delights appearing on the menu throughout the year include Nottinghamshire Bramley apples, Stilton cheese and prime Nottinghamshire beef. Richard says: “The most important things in cooking are the quality of the ingredients and fresh local produce, combined with consistent standards and execution. The team here works as a whole, which ensures we put ‘personality on the plates’ and our guests continually return and recommend.” Richard joined Ye Olde Bell as Restaurant & Bistro Head Chef in 2014, and is originally from Nottingham. He’s been a chef for 17 years and has worked in some of the best restaurants in the country throughout his career. He is passionate about giving a new generation the opportunity to learn the trade, and says, “Apart from achieving more accolades and continually improving the product, my own personal ambitions for the future are my trainee chefs. There is nothing better than having a young individual join the team and to train and watch their development.” The food offered at Ye Olde Bell hotel really does cater for all tastes.
